Slap Yo Mama Chocolate Fudge Cookies

Last week The Great American Bake-off was on CBS.
  I am loving that show.
There is this one lady, Francine, also a Florida Gator!!!!, and I just love her, she is a hoot!..
She made these cookies and I had to make them after seeing them.  OK, if you need a pick me up; this is it.

You will not be dis-appointed.

SLAP YO MAMA CHOCOLATE FUDGE COOKIES

Ingredients
1 c pecans or walnuts
3/4 c self rising flour
1 tsp instant espresso powder
 12 oz. semisweet chocolate
1/4 c unsalted butter, cut into small chunks
1 3/4 c white sugar
4 eggs, room temperature
1 tsp pure vanilla extract
1 c dark chocolate chips
1 c white chocolate chips
Directions
1. Preheat oven to 350 degrees and place rack in center of oven.

Place the pecans on a baking sheet and bake for 8-10 minutes, or until lightly brown and fragrant. Let nuts cool and then chop coarsely.

2. whisk together the flour,  and espresso powder. Melt the chocolate and butter in a stainless steel bowl placed over a saucepan of simmering water, stirring until smooth. Remove from heat and set aside to cool to room temperature

3. In the bowl of your electric mixer (or with a hand mixer), beat the sugar and eggs until pale yellow and thick, about 5 minutes.

Beat in the melted chocolate mixture and vanilla extract.

Fold in the dry ingredients to the chocolate batter and mix only until incorporated. Stir in the chocolate chips and nuts. Cover with plastic wrap and refrigerate the batter just until firm, about 30-60 minutes.

4. Preheat oven to 350 degrees and place rack in center of oven. Line two baking sheets with parchment paper.
Bake for 14 minutes.

5. Remove from oven and place baking pan on a wire rack to cool. When cookies are firm, remove from baking pan and let completely cool on rack.

Chocolate Cobbler!

Chocolate Cobbler

1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
7 tablespoons cocoa powder, divided
1 1/4 cup sugar, divided
1/2 cup milk
1/3 cup melted butter
1 1/2 teaspoon vanilla extract
1/2 cup brown sugar, packed
1 1/2 cup hot coffee

Preheat oven to 350 degrees.

Mix together flour, baking powder, salt, 3 tablespoons of the cocoa powder and 3/4 cup of the white sugar.  Reserve remaining cocoa and sugar.

Stir the milk, melted butter and vanilla into the flour mixture.  Mix until smooth.  Pour the mixture into an un-greased 8 inch baking dish.  Batter is thick.

In a separate bowl, mix together the remaining white sugar (1/2 cup), the brown sugar and remaining 4 tablespoons of cocoa.  Sprinkle this mixture evenly over the batter.

Pour the hot coffee over all.  Do not stir!!!!

Bake for 40 minutes or until the center is set.  Let stand for a few minutes before serving.

This is so good, especially if served hot with a
scoop of vanilla ice cream on top.....

Lots of new recipes to follow this week.

Am making up for not posting in almost 2 weeks!

Ice Cream Dessert!!!

Football season is upon us.

My oldest son, Coleman, who lives in Tampa, FL;  comes home every Labor Day weekend to watch the 1st Gator game with his Dad and brother, James.  Have you guessed by now we are Florida Gators?  I grew up in Gainesville, Fl.  In my family if you do not bleed Florida Orange and Blue you cannot marry into the family.  So my hubby learned to love Gator Football....

With Coleman coming home for a long weekend he has put in his food order.  So I will start my week off with one of his favorites "Ice Cream Dessert".  I will surprise you all week with lots of football tailgating food.

Hubby came home from work today and found the Ice Cream Dessert and had to have a piece, but not to worry, this recipe makes a lot of it.

Ice Cream Dessert

1/3 cup melted butter
2/3 cup brown sugar
1 cup coconut
1 cup nuts
4 cups Rice Chex, Corn Chex or Crispix (what ever you like)

Crush chex, combine above ingredients.  Put 1/2 mixture in a 9 X 13 inch pan.  Smooth 1/2 gallon ice cream.  Then put remaining mixture on top and freeze.  Drizzle with Chocolate Syrup.
