Peach Pie!

I love this time of year! 

 Fresh fruits and vegetable's.  Nothing better. 

 I picked up some peaches on Friday and hubby thought I was making him a peach pie when I really just wanted them to eat... Well I gave in and make him a Peach Pie this morning.  

Peach Pie




Flaky Pie Crust 
(I make my own pie shells, but you can purchase pre-made)

3/4 - 1 cup sugar, depending on how sweet your peaches are.
4 tablespoons flour
1/2 teaspoon nutmeg
dash salt
1 teaspoon vanilla
6 -  8 cups peeled, sliced fresh peaches
2 tablespoons butter

Combine sugar, flour nutmeg and salt.  Add to peaches, mix lightly.  Fill shell and dot with butter.

Add top crust and make sure to put steam cuts on top.

Bake at 400 for 45 minutes.

I served mine warm with a couple scoops of vanilla ice cream...

Spring is Here!

It has been a beautiful weekend.  

Sunny, Warm and just magnificent!!!!!!   

Reminded me when I was a very young girl and selling lemonade on the side of the road, of course the only people that bought any lemonade was my friends and the Mailman, which at that time was a walking mailman... 

I decided to make something Springy.....  
so I made Lemonade Pie.  
 It took all of 15 minutes.  

Hubby also requested some Chicken Salad, so I gave in and did that too.  

Lemonade Icebox Pie


1 package (8 ounce) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
3/4 cup thawed lemonade concentrate
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust, I used vanilla wafer crust

In a large bowl, beat cream cheese and milk until smooth.  Beat in lemonade concentrate.  Fold in whipped topping.  Pour into crust.  Cover and refrigerate until set....

You can add a few drops of food coloring, yellow or pink.  

This is a great pie for your Easter table..

Peach Fried Pies!

Hubby has been trying to get me to make these for 35 years.  Well today I broke down and made him some.  

Took some time and made a mess but well worth it.

These are so good!!!!  

Words cannot describe them....... 

So if you like Peaches and have a little time you really need to try these.

Peach Fried Pies


1 (8 ounce) package dried peaches, chopped
3 cups water
1/2 cup sugar
1/4 cup golden raisins
2 teaspoons butter
1/4 teaspoon ground nutmeg

Combine peaches and water in a saucepan, bring to a boil, reduce heat and simmer, uncovered for 40 minutes, adding water if necessary.  Drain well.  Stir in sugar, raisins, butter and nutmeg, mixing well.

Pastry

2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup shortening
1/4 cup plus 3 tablespoons cold water
1 teaspoons vinegar

Combine flour, soda, salt and nutmeg.  Cut in shortening with pastry blender until mixture resembles coarse meal.  Sprinkle water and vinegar evenly over surface.  Stir with a fork until a ball.

Divide pastry evenly into 8 pieces; roll each portion into a 6 inch circle.  Place about 3 tablespoons peach mixture on half of each circle.  Moisten edges of circles with water.  Fold circle in half; press edges together with a fork dipped in flour.

Heat 3/4 inch oil to 375 degrees in a cast iron skillet.  cook pies until golden, turning once.  Drain on paper towels and sprinkle with sugar.

I promise you these are worth the time and mess.

Coconut Cream Pie

It has been almost 3 weeks since I have posted.
  I have been so pre-occupied and could not even think about blogging.  For the last week I have missed it so much.  Long story short, Hubby lost his job after many, many years.  I guess Loyalty is not important anymore.  Then Hubby's mom got sick and he had to take an emergency trip.  She is doing better now, I cooked up lots of dishes and he took them and put them in the freezer for her.  

He came home yesterday and I am so glad, missed him so very much.  For a surprise I made him a Coconut Cream Pie!!!!!  

Not only is it beautiful but it is so good.


1 flaky pie crust
2 cups whole milk
3/4 cup sugar
1/3 cup all-purpose flour
Pinch of salt
4 large eggs, divided
1 1/2 cups sweetened shredded coconut
1 teaspoon pure vanilla extract
Pinch of cream of tarter

Preheat oven to 350.  Bake pie crust for 20 - 30 minutes, until browned.  You need to pre-bake your pie crust when making a cream pie.

Mix 1/2 cup sugar, flour, salt in a medium sauce pan.  Gradually add milk and cook over medium heat until thickened.  

Separate eggs.  Mix 1/2 cup milk mixture to the egg yolks, whisk until mixed and whisk into milk mixture and cook for approximately 2 more minutes.  Take off heat and add vanilla and coconut.  Cool for approximately 30 minutes.

Meanwhile, whip egg whites with pinch of cream of tarter, when soft peaks form add 1/4 cup sugar and whip until stiff peaks form. (I add 1 teaspoon vanilla to my meringue)

Pour Cream filling into baked pie crust.  Spoon meringue on top of cream filling and make pretty.  I sprinkled additional coconut.  I baked at 350 for about 7 - 9 minutes to toast coconut and brown the tips of the meringue.


This pie is super easy to make and taste so good.

Lemon Meringue Pie

During these hot days in August we all need a little refreshing.  

This is so perfect for a cool dessert.  

Fast and easy to prepare.  

So Yummy!  

You will go back for seconds.

Lemon Meringue Pie



Crust

2 cups vanilla wafer crumbs (crust)
1/3 cup butter (crust)
1/2 cup finely chopped almonds (crust)
3 Tablespoons sugar (crust)

Filling
14 - 15 oz. sweetened condensed milk (filling)
1/2 cup lemon juice ( fresh or bottled) (filling)
2 egg yolks (filling)

Meringue
3 egg whites (meringue)
1/4 cup sugar (Meringue)
1 teaspoon Vanilla (Meringue)

For crust, crush half of wafers (about 40).  Stir in sugar.  Add melted butter and stir until well blended.  Pat out into pie plate.  Line more wafers around to make pretty.

For filling, mix all ingredients with electric mixer until well blended.  Pour into crust.  Top with Meringue.

For meringue, Whip egg whites until foamy.  Add sugar and vanilla.  Continue beating on high speed until soft peaks form.  Pour on top of pie and spread to the edges to seal well.  Bake at 325 for 15 minutes or until top is golden.  Refrigerate before serving.
