Magic 5 Way Cookies
1 Can Eagle Brand Milk
1/2 cup Peanut Butter
Mix all together well.  Then add any of the following you want:
1 cup chopped nuts
2 cups bran flakes
2 cups raisins
2 cups Cornflakes
2 cups chopped dated
2 cups chocolate chips
Mix with above and bake at 350 for 10 - 12 minutes.  I put parchment paper on the pan. 

 I always use cornflakes, chocolate chips and nuts.  Never used any of the other things but I think it would be good to try something different.

Cornbread Casserole
1/2 lb. ground beef                      1/4 cup flour
1/4 cup chopped onion               1/4 cup cornmeal
1/2 cup green pepper                  3/4 tsp. sugar
8 oz. can corn                               3/4 tsp. baking powder
1/2 cup tomato soup                   dash salt
1/2 tsp. salt                                   1 egg
dash pepper                                 1/2 cup milk
                                                       1 tabl. Crisco oil 

Cook ground beef, onion and green pepper until brown.  Add corn, soup, salt and pepper.  Spoon into greased casserole dish.  Set aside.  Combine other ingredients.  Pour over casserole.  Bake at 375 for 30 - 40 minutes.

I usually double the recipe.



Double Good Macaroni and Cheese

8 oz. package elbow macaroni
2 cups cottage cheese
3/4 cup sour cream
1 egg, slightly beaten
1 tsp. salt
1/8 tsp. pepper
2 tsp. grated onion
10 - 13 oz. sharp cheddar cheese, grated
Cook pasta according to pkg. directions, drain.  Combine remaining ingredients in large mixing bowl, mixing to blend.  Gold in pasta.  Turn into a lightly greased shallow 2 quart baking dish.  If desired sprinkle with extra cheese.  Bake at 350 for 45 minutes.  Yields 6 - 8 servings.

Parmesan Crusted Chicken










1/2 cup Parmesan Cheese, divided
1/4 cup ranch dressing
1/2 cup bread crumbs
1 1/4 tsp. garlic salt, divided
1/3 cup shredded Parmesan 
2 tablespoons melted butter
4 boneless skinless chicken breasts
2 tablespoons canola oil
1 cup shredded provolone cheese

For the ranch spread, mix 1/4 cup grated Parmesan and ranch dressing. 

For the Parmesan Crumb topping, mix bread crumbs, 1/4 tsp. garlic salt, shredded Parmesan and remaining grated Parmesan.  Mix together with the 2 table. melted butter.  Mixture needs to be evenly moist.

Sprinkle both sides of chicken with remaining garlic salt.  Place in large non-stick skillet with oil.  Cook 6 - 7 minutes on each side.  Chicken should be golden brown.

Transfer cooked chicken to oven safe casserole dish.  Spread each breast with ranch spread, top with provolone and Parmesan crumb topping.  Place chicken under broiler until cheese melts and crumb topping begins to turn light brown.

This is so good. I served this with Mashed Potatoes, fresh green beans, and homemade rolls.    Pound Cake was our dessert.

Remember to wear your magic apron and smile while cooking.  It makes our dishes taste better.


Sour Cream Pound Cake

2 sticks butter, softened
3 cups sugar
6 eggs, room temperature
3 cups flour
1/4 tsp. baking soda
1 cup sour cream
1 tsp. vanilla
1/2 tsp. almond extract

Set oven to 275.  Prepare a 10 inch tube pan.

In a sifter measure the flour, salt and baking soda.  Set aside.

Cream the butter and sugar well.  Add eggs one at a time to the sugar mixture.  When all are added, beat until the mixture is light yellow in color.

Add half of the flour and half of the sour cream to the sugar mixture and beat well.  Add the last of the flour and sour cream; beat well.  Add vanilla and almond extract.  Beat well.  You do not want to whip the batter, just blend well.

Pour in pan, smoothing the batter evenly around.  Try not to touch the sides of the pan.  Give the pan 2 - 3 good shakes before putting into the oven.

Bake for 2 hours or until a cake tester comes out clean.  Let cake sit in pan about 10 - 15 minutes then turn out onto a rack to finish cooling.

This taste better the second and third day if it lasts that long.

Key Lime Coconut Angel Cake

1Box Betty Crocker Angel Food Cake mix
1 1/4 cups cold water
1 can (14 oz) unsweetened condensed milk
1/3 cup Key Lime juice
1 teaspoon lime peel
1 container (12 0z) frozen whipped topping, thawed
1 cup flaked coconut

Make cake mix as directed on package, using cold water.  Cut cake horizontally into 3 layers.  Place bottom layer cut side up, on serving plate.

In large bowl, beat milk, lime juice and lime peel with wire whisk until smooth and thickened.  Fold in whipped topping.

Spread 1 cup lime mixture evenly over top of first layer of cake.  Place second layer of cake carefully on bottom layer, spread evenly with 1 cup lime mixture.  Top with remaining layer of cake.

Frost top and side of cake with remaining lime mixture.  Sprinkle with coconut.

This was so easy and tastes un-believable.  So light and fresh.  You have to try this.

Carmelized Chicken

2 1/2 lbs chicken
2 - 3 tablespoons olive oil
1/3 cup soy sauce
2 - 3 tablespoons ketchup
3/4 cup honey
2 - 3 garlic cloves, minced

salt and pepper

Preheat oven to 350 degrees.

This was so easy and so good.  We had this with brown rice and green beans.  Great meal.


Cheese Potatoes

Melt 3 tablespoons butter and saute 2 teaspoons finely chopped onion.  Stir in 3 tablespoons flour until blended.  Cook and slowly stir in 1 1/2 cups milk.  Season with 1 1/2 teaspoon salt and a dash of cayenne pepper.  Cook sauce until it is smooth and boiling.  Reduce heat and add 8 oz. grated sharp cheese, 3/4 cup finely chopped green pepper and a small jar pimento.  Butter a 2 quart casserole dish and fill it with alternate layers of potatoes (4 cups thinly sliced potatoes) and sauce.  Bake at 350 for 2 hours.  Cover for the first 1/2 hour.

These potatoes have been in my family for years.  They are so good. 

Beef Burgundy

1 lb. Sirloin Steak, cut into strips
2 cans Campbell Golden Mushroom Soup
2 tablespoons butter
2 tablespoons parsley
1/8 teaspoon pepper
1 cup Burgundy
1 onion

In skillet brown meat and onion in butter.  Add remaining ingredients.  Cover, simmer for 1 hour or until tender.  Serve over rice.

This is so good and so easy.  Given to me years ago by my mother in law.


Parmesan Chicken

1/2 cup crushed cornflakes
1/3 cup grated Parmesan Cheese
1/4 cup seasoned bread crumbs
1 1/2 teaspoon dried parsley flakes
1/2 teaspoon salt
1/8 teaspoon pepper
6 tablespoons butter, melted
2 - 3 lbs. chicken


In a shallow bowl, combine the first 6 ingredients.  Place butter in another shallow bowl.  Dip chicken in butter, then roll in cornflakes mixture.


Arrange chicken on a rack in a foil lined pan.  Bake uncovered at 350 for 45 - 50 minutes or until chicken juices run clear.


I made up this recipe and my family loves this.  Try it, fast and easy...


Spaghetti


2 lb. ground beef
1 cup minced onion
1 clove garlic
2 16oz. Chopped tomatoes
1 6 oz. tomato paste
2 tabl. Parsley
1 tsp. salt
1 1/2 tsp. oregano
1 tsp. brown sugar
1/4 tsp. thyme
1 cup water


Cook ground beef, onion and garlic in a heavy dutch oven over medium heat until meat is browned; drain off drippings.  Stir in next nine ingredients.  Simmer, uncovered for 3 hours or until sauce is thickened.



Strawberry Pretzel Salad
2 cups unsalted thin pretzels
3 tablespoons sugar
3/4 cup melted butter
1 (8 ounce)  package cream cheese
1 cup sugar
1 package cool whip
1 package (large) strawberry jello
2 cups boiling water
2 (10 ounce) packages frozen strawberries
1 small can crushed pineapple

Mix pretzels, 3 tablespoons sugar, and butter.  Spread mixture over bottom of baking dish.  Bake at 400 for 7 minutes.  Let cool 1 hour.

Blend cream cheese, 1 cup sugar and cool whip.  Spread over pretzel mixture.  Dissolve strawberry jello in 2 cups boiling water.  Add frozen strawberries and pineapple.  Chill until partially jelled.  Then pour over the cream cheese mixture.  Refrigerate.  Use a 9 X 13 pan.

Lasagna


1 lb. Ground Beef
1/2 lb. ground pork
1 can (28oz) tomatoes
1 can (12 oz.) tomato paste
2 tsp. garlic salt
1 1/2 tsp. Oregano
1 tsp. Basil
2 cups Cottage Cheese
1/2 cup Parmesan Cheese
12 oz. Mozzarella Cheese
12 oz. Lasagna noodles, cooked and drained
1/2 cup Parmesan Cheese
In a large skillet; cook and stir meats until brown.  Drain off fat.  Add tomatoes, break up with fork, stir in tomato paste, garlic salt, oregano and basil.  Heat to boiling, stirring occasionally.  Reduce heat; simmer uncovered for 20 minutes.  Heat oven to 350.  Stir together cottage cheese and 1/2 cup Parmesan cheese.  I add an egg to this mixture to help hole it together. Set aside 1 cup meat sauce and 1/2 cup mozzarella cheese.  In un-greased baking pan, alternate layers of 1/3 each; noodles, remaining meat sauce, mozzarella and cottage cheese.  Spread reserved meat sauce over top; sprinkle with 1/2 cup Parmesan cheese and mozzarella cheese.  Bake uncovered 45 minutes.  Let sit for 15 minutes before cutting.




Brunswick Stew


 3 lb. Chicken                                             2 lb. Pork Roast, cooked and shredded
1 large onion                                              1 Tabl. salt
1 28 oz Crushed Tomatoes                       1 1/2 tsp. pepper
1 6 oz Tomato Paste                                 1/4 cup sugar
1 Can Tomato Juice                                  1 drop Hickory Smoke
6-7 Potatoes
3 cups Shupeg Corn

Cover chicken in stock pot with water cook until done, about 30 - 45 minutes of boiling.  Remove Chicken from water and reserve the water. (I add celery and onion to the water for extra flavor.  Remove all celery pieces and fat from water. (I will cook my chicken the day before and let the water sit for a couple of hours and the fat will harden.  Just remove the fat.  Pour at least 6 cups chicken water into the crock pot.  Shred chicken and add to crock pot.  Add all other ingred. and put on low for 8 - 10 hours.    Serve with Cornbread.  My mother in law has been making this since she was a small child.  Recipe came from her mother.  We sometimes add shredded beef roast.  

Lemon Meringue Pie


2 cups vanilla wafer crumbs (crust)
1/3 cup butter (crust)
1/2 cup finely chopped almonds (crust)
3 Tablespoons sugar (crust)

14 - 15 oz. sweetened condensed milk (filling)
1/2 cup lemon juice ( fresh or bottled) (filling)
2 egg yolks (filling)

3 egg whites (meringue)
1/4 cup sugar (Meringue)
1 teaspoon Vanilla (Meringue)

For crust, crush half of wafers (about 40).  Stir in sugar.  Add melted butter and stir until well blended.  Pat out into pie plate.  Line more wafers around to make pretty.

For filling, mix all ingredients with electric mixer until well blended.  Pour into crust.  Top with Meringue.

For meringue, Whip egg whites until foamy.  Add sugar and vanilla.  Continue beating on high speed until soft peaks form.  Pour on top of pie and spread to the edges to seal well.  Bake at 325 for 15 minutes or until top is golden.  Refrigerate before serving.

Elvis Presley Cake
1 (18 3/4 oz) yellow cake mix 
1 (3 oz) vanilla pudding (not instant)
4 eggs
1/2 cup oil
1 cup milk
1 (16 oz) can crushed pineapple, undrained
3/4 cup sugar

Mix cake mix, pudding, eggs, oil and milk.  Beat until smooth.  Bake in a 9 X 13 inch pan.  Bake at 350 for 35 - 45 minutes or until toothpick comes out clean.

While cake is cooking heat pineapple with sugar until the sugar is dissolved.

When cake is done poke holes in cake and pour pineapple mixture on top.  Allow the cake to cool completely.

Frosting
1 (8 oz) package cream cheese, softened
1 stick butter, softened
1 tsp. vanilla
3 cups sifted confectioners sugar
1/2 - 1 cup pecan pieces

Cream butter and cream cheese until fluffy.  Add vanilla, beat well.  Add remaining ingredients and mix well.  Frost cake and oh so good.

Grits - Sausage Casserole

1 cup quick cooking grits
1 lb. pork sausage
1 small onion
1 1/2 cups shredded sharp Cheddar cheese.

Cook grits according to package directions; set aside.

Cook sausage, crumble, in a large skillet; add onion and cook until done.  Drain well.

Combine grits, meat, and 1 cup cheese.  Spoon into lightly greased baking dish.  Bake at 350 for 15 minutes.  Sprinkle with remaining 1/2 cup cheese; bake an additional 5 minutes.

Don't forget to wear your apron!


Meatloaf
Recipe from Mary Bobo's Cookbook


1 1/2 pounds ground beef
3/4 cup uncooked oatmeal
1 1/2 teaspoons salt
1/4 cup onions, chopped
1/4 cup catsup
2 egg, beaten


Grease a 9 X 3 inch loaf pan.  In a large bowl combine all the ingredients and form into a loaf.  Place into the prepared pan.  Bake at 350 for 1 hour.  Pour off the juice and bake about 10 more minutes.  Place on a platter and cover with sauce.


Meat Loaf Sauce


3/4 cup catsup
2 tablespoons onion, chopped
1/4 cup brown sugar, firmly packed


In a small saucepan simmer the sauce over low heat until the onions are tender.


This is the best meatloaf I have ever had.  You can also add some chopped green peppers to the sauce and it is really good.  My hubby does not like green peppers or I would have added them.


Amaretto Expresso Brownies


1 2/3 cup sugar
3/4 cup butter, melted
1 Tablespoon water
1 tablespoon amaretto liqueur

2 large eggs

2 tsp. vanilla extract
1 1/2 cups all purpose flour
3/4 cup baking cocoa
1/2 tsp. baking powder
1/4 tsp. salt
1 cup chopped Walnuts (soaked in Amaretto Liqueur over night, drained)

Preheat oven to 350.  13 x 9 inch pan.

Combine sugar, butter, water and amaretto in a large bowl.  Stir in eggs and vanilla extract.  Combine flour, baking cocoa, baking powder and salt in a bowl.  Stir into sugar mixture.  Stir in nuts and pour into foil lined and greased pan.

Bake for 14 - 25 minutes.  Sprinkle with powdered sugar if desired.


Peanut Butter Cookies
This recipe came from the Jif Peanut Butter jar
3/4 cup Peanut Butter
1/2 cup Crisco vegetable shortening
1 1/4 cups firmly packed brown sugar
3 tablespoons milk
1 tablespoon vanilla extract
1 egg
1 3/4 cup all purpose flour
3/4 tsp. salt
3/4 tsp. baking soda
Cream peanut butter, shortening, brown sugar until creamy.  Add milk, vanilla and egg.  Mix well.  Add dry ingredients and mix well.


Bake at 375 on ungreased baking sheet for 7 - 8 minutes.


These are so good.


Beef Roast and Gravy
Large chuck roast
1 can Cream of Mushroom Soup
1/2 pkg. dry Lipton onion soup mix


Put roast is crock pot.  Sprinkle onion soup mix on top of roast.  Spread mushroom soup on top of roast.  


I cook this between 8 and 10 hours on low or 4 - 5 hours on high.


This is so tasteful and so comforting...

Banana Bread


1 stick butter
1 cup sugar
2 cup sifted flour
2 eggs, beaten
1 tsp. soda
3 bananas, mashed
1/2 cup chopped nuts

Cream butter and sugar.  Add eggs and soda and mix well.  Add flour and mix well.  Add bananas and 1/2 cup chopped nuts.  Bake 350 for 50 - 60 minutes.

Blueberry Muffins


1 1/2 cups all purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
Crumb Topping
1/2 cup white sugar
1/3 cup all purpose flour
1/4 cup butter, cubed
1 1/2 teaspoon ground cinnamon

Preheat oven to 400.  Line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup white sugar, salt and baking powder.  Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.  Mix this with flour mixture.  Fold in blueberries.  Fill muffin cups right to the top and sprinkle with crumb topping mixture.

To make crumb topping:  Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 1/2 teaspoon cinnamon.  Mix with fork, and sprinkle over muffins before baking.

Bake for 20 - 25 minutes in the preheated oven.

Coke Cola Cake

1 Box Duncan Hines Dark Chocolate Fudge Cake
1 small box instant Chocolate pudding
3 large eggs
1/3 cup vegtable oil
1 cup Coke
Beat well and pour into a 9 X 13 inch baking pan sprayed with nonstick cooking spray.
Bake at 350 for 35 - 40 minutes.

About 10 minutes before cake is done start making the frosting...

1 stick butter
3 tablespoons unsweetened cocoa
4 - 6 tablespoons heavy cream
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
Chopped pecans (optional)
Melt butter, add heavy cream and cocoa.  Add powdered sugar and wisk to get out
lumps.  Take off heat and add vanilla extract.  Wisk well and pour on top of cake when it comes out of the oven.  Sprinkle with nuts.

Eat warm with ice cream or after it has cooled.  Good both ways...

Hello Dolly Bars!


2 cups graham cracker crumbs
1/3 cup melted butter
3 Tabl. Sugar
1 cup chopped pecans
1 cup semisweet chocolate morsels
2/3 cup sweetened flaked coconut
1 (14 Oz) can sweetened condensed milk

Preheat oven to 350°F.  Combine first 3 ing. In a medium bowl.  Press mixture onto bottom of a lightly greased 13X9 inch pan.  Bake 8 minutes.  Sprinkle pecans, chocolate morsels, and coconut over hot crust.  Pour condensed milk over top.  (Do not stir).

Bake at 350°F for 20 - 25 minutes or until lightly browned and edges are bubbly.  Let cool 1 hour on wire rack.  Cut into bars.

Cowboy Casserole


2 lbs. boneless, skinless chicken breasts, cut into 1/2 inch cubes
8 - 10 medium potatoes, cut into 1/2 inch cubes (I leave on the skins)
1/3 cup olive oil
1 tsp. salt
1 1/2 tsp. black pepper
1 1/2 tsp. paprika
2 tablespoons garlic powder
3 tablespoons hot sauce (optional)

Topping:
2 cups sharp cheddar and Monterrey Jack cheese
1 cup crumbled bacon
1 cup diced green onion

Preheat oven to 450.

In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder and hot sauce.  Add the cubed potatoes and stir to coat.  Carefully place potatoes into a greased 9 X 13 inch pan, leaving as much of the olive oil mix as possible.  Bake for 45 minutes, stirring every 15 minutes or so.  While potatoes are cooking place the cubed chicken to the leftover olive oil mixture.  Once the potatoes are fully cooked, remove from the oven and lower the oven temp. to 400.  Place the coated chicken over the cooked potatoes.  Sprinkle the combined topping mixture over the chicken.  Return to the oven and cook for 15 - 25 minutes until done and bubbly.

Chocolate Cobbler!


Chocolate Cobbler

1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
7 tablespoons cocoa powder, divided
1 1/4 cup sugar, divided
1/2 cup milk
1/3 cup melted butter
1 1/2 teaspoon vanilla extract
1/2 cup brown sugar, packed
1 1/2 cup hot coffee

Preheat oven to 350 degrees.  

Mix together flour, baking powder, salt, 3 tablespoons of the cocoa powder and 3/4 cup of the white sugar.  Reserve remaining cocoa and sugar.

Stir the milk, melted butter and vanilla into the flour mixture.  Mix until smooth.  Pour the mixture into an un-greased 8 inch baking dish.  Batter is thick.

In a separate bowl, mix together the remaining white sugar (1/2 cup), the brown sugar and remaining 4 tablespoons of cocoa.  Sprinkle this mixture evenly over the batter.

Pour the hot coffee over all.  Do not stir!!!!

Bake for 40 minutes or until the center is set.  Let stand for a few minutes before serving.

This is so good, especially if served hot with a 
scoop of vanilla ice cream on top.....


Cinnamon Sugar Almonds


1 1/2 cups sugar
1 1/2 cups brown sugar
3 tablespoons cinnamon
1/8 tsp. salt
1 egg white
2 teaspoons vanilla
3 cups almonds
1/4 cups water

In a medium sized bowl, mix together sugars, cinnamon and salt.  Set aside.  In another medium sized bowl, whisk the egg white and vanilla until its a little frothy.  Add almonds to the egg white and vanilla mixture, make sure the almonds are thoroughly coated.  Add cinnamon mixture to the almonds and toss until coated.  Thoroughly spray the inside of your crock pot with Pam.  Add the mixture of almonds and sugars to the crock pot and turn to low.  Cook 3 - 4 hours stirring every 20 minutes.  In the last hour, add the 1/4 cup of water and stir well.  This ensures a crunch yummy coating.

Line a baking sheet with parchment and spread the almonds flat to cool.

Dark Chocolate Cake!


2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup Hershey's Special Dark Cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup very hot strong coffee

Heat over to 350.  Grease and flour two 9 inch pans.

Stir together sugar, flour cocoa,baking powder, baking soda, and salt.  Add eggs, milk, oil and vanilla.  Beat on medium speed of electric mixer 2 minutes.  Stir in hot coffee (batter will be thin).  Pour batter into prepared pans.

Bake for 30 - 35 minutes

I doubled the frosting

1/2 cup soft butter
3 cups powdered sugar
2/3 cup Hershey's Special Cocoa
1/3 cup milk
1 teaspoon vanilla extract

Beat soften butter until fluffy.  Add sugar, and cocoa alternately with milk.  Beat well.  Add vanilla extract.



French Toast Casserole


1 tablespoon unsalted butter, at room temperature
1 loaf French bread, cut into 18 to 20, 1 inch thick slices
6 large eggs
1 cup eggnog
1 cup milk
2 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of kosher salt

Topping:

8 tablespoons unsalted butter, at room temp.
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoon light corn syrup
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg

Grease a 13 x 9 inch baking dish (metal, not glass),  Arrange the bread slices in the dish in 2 overlapping rows.

Whisk together eggs, eggnog, milk, sugar, vanilla extract, cinnamon, nutmeg and salt.  Pour the egg mixture over the bread slices, making sure the bread is covered well.  Cover and refrigerate overnight.

Preheat oven to 350.
Remove dish from frig.

Combine all topping ingred.  Sprinkle over top of the french toast casserole.

Bake 30 - 40 minutes until lightly browned.  Remove from oven.  Serve with maple syrup and powdered sugar.



Mimi's Luscious Lemon Bars


2 1/4 cups all purpose flour, divided
1/2 cup powdered sugar
1 cup cold butter, cut into pieces
4 large eggs
2 cups granulated sugar
1 teaspoon lemon zest
1/3 cup fresh lemon juice - (I used 1/2 cup)
1/2 teaspoon baking powder
Powdered Sugar

Preheat oven to 350.  Line bottom and sides of a 13 x 9 inch pan with heavy-duty aluminum foil.

Stir together 2 cups flour and 1/2 cup powdered sugar.  Cut in butter using a pastry blender until crumbly.  Press mixture onto bottom of prepared pan.

Bake at 350 for 20 - 25 minutes or until lightly browned.

Meanwhile, whisk eggs in a large bowl until smooth; whisk in granulated sugar, lemon zest, and lemon juice.  Stir together baking powder and remaining 1/4 cup flour, whisk into egg mixture.  Pour mixture over hot baked crust.

Bake at 350 for 25 minutes or until filling is set.  Let cool in pan on a wire rack for 30 minutes.  Lift from pan, using foil sides as handles.  Cool completely on a wire rack.  Sprinkle with powdered sugar.

The crust was crispy and the filling was warm and lemony....  


Slap Yo Mama Chocolate Fudge Cookies


Ingredients
1 c pecans or walnuts
3/4 c self rising flour
1 tsp instant espresso powder
 12 oz. smisweet chocolate
1/4 c unsalted butter, cut into small chunks
1 3/4 c white sugar
4 eggs, room temperature
1 tsp pure vanilla extract
1 c dark chocolate chips
1 c white chocolate chips
Directions
1. Preheat oven to 350 degrees and place rack in center of oven. Place the pecans on a baking sheet and bake for 8-10 minutes, or until lightly brown and fragrant. Let nuts cool and then chop coarsely.
2. whisk together the flour,  and espresso powder. Melt the chocolate and butter in a stainless steel bowl placed over a saucepan of simmering water, stirring until smooth. Remove from heat and set aside to cool to room temperature
3. In the bowl of your electric mixer (or with a hand mixer), beat the sugar and eggs until pale yellow and thick, about 5 minutes. Beat in the melted chocolate mixture and vanilla extract. Fold in the dry ingredients to the chocolate batter and mix only until incorporated. Stir in the chocolate chips and nuts. Cover with plastic wrap and refrigerate the batter just until firm, about 30-60 minutes.
4. Preheat oven to 350 degrees and place rack in center of oven. Line two baking sheets with parchment paper.  Bake for 14 minutes.

5. Remove from oven and place baking pan on a wire rack to cool. When cookies are firm, remove from baking pan and let completely cool on rack.

Orange - BBQ Chicken




2 pieces of chicken, thawed
1/2 jar of Bobby Rays BBQ Sauce
1/2 jar of Orange Marmalade

I sprinkled my chicken with Garlic Pepper, my secret ingredient.
Cooked in the crock pot for 3 hours on high.

Mixed the BBQ Sauce and Orange Marmalade and poured on top after the 3 hours.  I cooked for another hour.

That is it,  Easy and Delicious...

Peach Pie


Flaky Pie Crust 
(I make my own pie shells, but you can purchase pre-made)

3/4 - 1 cup sugar, depending on how sweet your peaches are.
4 tablespoons flour
1/2 teaspoon nutmeg
dash salt
1 teaspoon vanilla
6 -  8 cups peeled, sliced fresh peaches
2 tablespoons butter

Combine sugar, flour nutmeg and salt.  Add to peaches, mix lightly.  Fill shell and dot with butter.

Add top crust and make sure to put steam cuts on top.

Bake at 400 for 45 minutes.

I served mine warm with a couple scoops of vanilla ice cream...


Sunshine Salad


1 small box lemon jello
Shredded carrots
Small can of pineapple (I usually used crushed but only had chunks)
Dissolve jello in 1 cup boiling water.  Add 3/4 cup cold water and stir well.  Chill until partially jelled.  Add carrots and pineapple, mix well and Chill....

Choco Dot Cookies




1 cup flour
1/4 cup shortening
3 tablespoons milk
1/8 tsp. salt
1/2 cup firmly packed brown sugar

Heat oven to 350.  Grease 13 X 9 X 2 inch pan.  
Mix flour, salt shortening, milk and press into pan.  Bake 10 minutes.

2 eggs
3/4 cup firmly packed brown sugar
1 tsp. vanilla
1 cup coconut
1- 6 oz. package chocolate chips
1 cup chopped nuts.

While baking beat eggs, stir in remaining ingredients and spread over baked layer.  
Bake an additional 20 minutes.  
Cut into 2 X 1 inch bars while warm.

Chili

1/4 cup Olive Oil
2 large cloves of garlic (peeled and minced)
3 large onions (peeled and chopped)
1 green pepper (seeded and chopped)
4 lbs. hamburger 
3 or 4 (1 lb 3 oz) cans whole tomatoes
2 ( 6 ounce) cans tomato paste
1/4 - 1/3 cup Chili Powder
1 teaspoon white vinegar
3 dashes Cayenne pepper
1 tablespoon salt
3 (16 ounce) cans red kidney beans
3 whole cloves
1 bay leaf

In skillet - saute garlic, onions, peppers until tender.  Add hamburger and cook until done.

Have this Hot on stove:
In a large kettle add tomatoes, tomato paste, chili powder, vinegar, cayenne pepper and salt.  After mixing the two above stir into kettle the kidney beans, cloves and bay leaf.

I simmer my chili for several hours on top of the stove, put into crock-pot and refrigerate overnight.  Cook on low for the whole day.
