Thanksgiving Eve!

Thanksgiving Eve!  I know everyone is cooking up a storm or have already prepared everything.  Me, well, we are going out for dinner.  It has been a long 3 months since I have been on my blog.  Life, and I know you all understand.  I did make a Pumpkin Pie and I am smoking a turkey breast tomorrow afternoon so we can have some leftovers. 

 I will be making some new aprons over the weekend, so get ready for some new pictures.

Thirty-One


Happy Tuesday to all the fabulous readers of

Mimi’s Magic Aprons!!

 
Cindy was kind enough to let me take over her blog for one post.  So just a little about me… I’m Kim, I live way out in the country and I love it!!  I didn’t grow up in the country so I’ve had to get use to a couple things like hearing cows moo          A-L-L-N-I-G-H-T-L-O-N-G, but now I would not trade it for anything!  On Christmas Day, the man of my dreams asked me to marry him (insert happy dance) so right now we are in the middle of planning our wedding.  I still can’t believe I’m going to marry my best friend, it feels like a dream.   I would love to hear any Bride-to-be and Wife-to-be advice you might have.

Let’s shift gears just a little bit or I will get carried away with talking about wedding plans.  A few months ago a friend of mine, Mendy, talked me into becoming a Thirty-One Consultant and I have loved every minute of it.  I’m still learning new things about the company and their products and I am amazed at the great quality of the products and the company as a whole.  As a Christian the Thirty-One vision meant a lot to me and I loved joining a team of other great Christian ladies. “ The name Thirty-One is derived from the Old Testament, where Proverbs 31 describes a virtuous woman who exhibits hard work, wisdom, encouragement and care for others. Because of these qualities she is worthy of reward, honor and praise. It is our intention to celebrate, encourage and reward women for who they are as individuals. Easter

Easter is a week from today.

Oatmeal Raisin Cookies!

I made Oatmeal Raisin Cookies today for my Hubby. 

 This are so good and very chewy.


1/2 cup (1 stick) plus 6 tabl. Butter, softened
3//4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 egg plus 1 egg yolk
2 teaspoons vanilla
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
3 cups Old fashioned Oats
1 cup Raisins
1 cup Walnuts

Heat oven to 350.

In a large bowl, beat butter and sugars on medium speed until creamy.

Add eggs, and vanilla, beat well

Add combined flour, soda, cinnamon, salt and nutmeg.  Mix well

Add oats, raisins and nuts, beat well.

Bake 8 - 10 minutes or until golden brown.

Chocolate Cobbler!

I made this for dessert tonight!

Easy!

Better than delish!


1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
7 tablespoons cocoa powder, divided
1 1/4 cup sugar, divided
1/2 cup milk
1/3 cup melted butter
1 1/2 teaspoon vanilla extract
1/2 cup brown sugar, packed
1 1/2 cup hot coffee

Preheat oven to 350 degrees.  

Mix together flour, baking powder, salt, 3 tablespoons of the cocoa powder and 3/4 cup of the white sugar.  Reserve remaining cocoa and sugar.

Stir the milk, melted butter and vanilla into the flour mixture.  Mix until smooth.  Pour the mixture into an un-greased 8 inch baking dish.  Batter is thick.

In a separate bowl, mix together the remaining white sugar (1/2 cup), the brown sugar and remaining 4 tablespoons of cocoa.  Sprinkle this mixture evenly over the batter.

Pour the hot coffee over all.  Do not stir!!!!

Bake for 40 minutes or until the center is set.  Let stand for a few minutes before serving.

This is so good, especially if served hot with a 
scoop of vanilla ice cream on top.....

Key Lime Bars

I made these Key Lime Bars for dessert tonight.  
First time and will make them more, they are so good and so very easy to make.  

Remember to always wear your "Mimi's Magic Apron"
 when cooking.  

Things just taste better...

Key Lime Bars


For the Crust:
1½ cups crushed graham crackers
2 tabl. Sugar
1/3 cup butter, melted
½ cup sweetened flaked coconut

In a small bowl, combine the crumbs, coconut and sugar; add butter and blend well.  Press onto the bottom of a nine inch springform pan.
Bake at 350°F for 8 minutes; cool on wire rack.

For the filling:
3 cups sweetened condensed milk
½ cup sour cream
¾ cup key lime juice
1 tabl. Grated lime zest

Preheat oven to 350°F.
In a medium bowl, combine condensed milk, sour cream, lime juice, and lime rind.  Mix well and pour into graham cracker crust.
Bake in preheated oven for 5 - 8 minutes, until tiny pinhole bubbles burst on the surface of pie.  Do not Brown.  Chill pie thoroughly before serving.  
Cut into 16 bars:  garnish with whipped cream and toasted coconut.
