Snicker Doodle Muffins

I made these muffins for my grandchildren, Parrish and Preston.  They loved them....

Snicker Doodle Muffins

2 sticks unsalted butter
1 cup sugar
2 teaspoons vanilla
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cream of tarter
1 teaspoon freshly ground nutmeg
1 1/4 cup sour cream
2 1/4 cups all purpose flour

1/2 cup sugar and 1 tablespoon cinnamon mixed together for rolling

Cream the butter and sugar until soft about 3 - 5 minutes.  Add in the vanilla.  Add in the eggs one at a time and mix until each in mixed.

In a separate bowl mix together the flour, soda, powder cream of tarter and nutmeg.

Add the flour mixture and the sour cream alternately to the egg mixture in the additions.  Start with the flour and end with the flour.  Scrap the bowl occasionally.

Using a large spoon, scoop out muffin batter one at a time and drop into a shallow bowl filled with the sugar cinnamon.  roll the muffin around in the mixture until is is covered in the cinnamon sugar.  Place muffin into prepared muffin tin.

Bake for 20 - 25 minutes at 350.


The aroma is outstanding..
