Peach Bread


Have a piece of Peach Bread for Breakfast.

I made this last night and it is so good and moist and has a crunchy topping.

This is not just for breakfast but a great dessert bread also.  Warm it and put a scoop of ice cream on top.  YUM!!!

Peach Bread
1/3 cup butter - softened                        1 cup peaches, peeled and cubed
1 cup sugar                                            1 2/3 cup all-purpose flour
2 eggs                                                    1 tsp. baking soda
1/3 cup water                                          1/2 tsp. salt
1 tsp. vanilla extract                                1/4 tsp. baking powder
1/8 tsp. almond extract                            1/2 cup chopped pecans
 
Topping
 
2 tbsp. chopped pecans
2 tbsp. brown sugar
 
 
Cream butter and sugar.  Add eggs one at a time, beating well after each addition.  Beat in water and extracts.  Stir in peaches.  Combine flour, baking soda, salt and baking powder and gradually add to creamed mixture.  Stir in pecans.  Pour into a greased 9 x 5 x 3 inch loaf pan.  Combine topping ingredients and sprinkle over batter.  Bake at 350 degrees for 50-55 minutes or until a toothpick inserted near the center comes out clean.  Cool for 10 minutes before removing from pan.  Cool on a wire rack.
