Oatmeal Raisin Cookies!

I made Oatmeal Raisin Cookies today for my Hubby. 

 This are so good and very chewy.


1/2 cup (1 stick) plus 6 tabl. Butter, softened
3//4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 egg plus 1 egg yolk
2 teaspoons vanilla
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
3 cups Old fashioned Oats
1 cup Raisins
1 cup Walnuts

Heat oven to 350.

In a large bowl, beat butter and sugars on medium speed until creamy.

Add eggs, and vanilla, beat well

Add combined flour, soda, cinnamon, salt and nutmeg.  Mix well

Add oats, raisins and nuts, beat well.

Bake 8 - 10 minutes or until golden brown.

Chocolate Cobbler!

I made this for dessert tonight!

Easy!

Better than delish!


1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
7 tablespoons cocoa powder, divided
1 1/4 cup sugar, divided
1/2 cup milk
1/3 cup melted butter
1 1/2 teaspoon vanilla extract
1/2 cup brown sugar, packed
1 1/2 cup hot coffee

Preheat oven to 350 degrees.  

Mix together flour, baking powder, salt, 3 tablespoons of the cocoa powder and 3/4 cup of the white sugar.  Reserve remaining cocoa and sugar.

Stir the milk, melted butter and vanilla into the flour mixture.  Mix until smooth.  Pour the mixture into an un-greased 8 inch baking dish.  Batter is thick.

In a separate bowl, mix together the remaining white sugar (1/2 cup), the brown sugar and remaining 4 tablespoons of cocoa.  Sprinkle this mixture evenly over the batter.

Pour the hot coffee over all.  Do not stir!!!!

Bake for 40 minutes or until the center is set.  Let stand for a few minutes before serving.

This is so good, especially if served hot with a 
scoop of vanilla ice cream on top.....
