Peach Bread


Have a piece of Peach Bread for Breakfast.

I made this last night and it is so good and moist and has a crunchy topping.

This is not just for breakfast but a great dessert bread also.  Warm it and put a scoop of ice cream on top.  YUM!!!

Peach Bread
1/3 cup butter - softened                        1 cup peaches, peeled and cubed
1 cup sugar                                            1 2/3 cup all-purpose flour
2 eggs                                                    1 tsp. baking soda
1/3 cup water                                          1/2 tsp. salt
1 tsp. vanilla extract                                1/4 tsp. baking powder
1/8 tsp. almond extract                            1/2 cup chopped pecans
 
Topping
 
2 tbsp. chopped pecans
2 tbsp. brown sugar
 
 
Cream butter and sugar.  Add eggs one at a time, beating well after each addition.  Beat in water and extracts.  Stir in peaches.  Combine flour, baking soda, salt and baking powder and gradually add to creamed mixture.  Stir in pecans.  Pour into a greased 9 x 5 x 3 inch loaf pan.  Combine topping ingredients and sprinkle over batter.  Bake at 350 degrees for 50-55 minutes or until a toothpick inserted near the center comes out clean.  Cool for 10 minutes before removing from pan.  Cool on a wire rack.

Crunchy Cobbler


This was our dessert this evening.  My sister in law sent me this recipe and I am here to tell you.  

IT IS HEAVEN!!!

It took me 5 minutes and bakes in 30 minutes ready to eat.  You can use any pie filling you want.  I bought Cherry Pie Filling and it is so good.  Next time I am going to try Peach.

Blueberry Muffins


I have been doing so much cooking in the last 2 weeks since my mother in law arrived.  This is the first time I have been able to post anything.  I do believe these were the best Blueberry Muffins I have ever made.  The cinnamon crumb topping made them even better.  I will be posting the recipe in the next couple of days.  

I will be making a scrumptious Pork Roast on Sunday and also post pictures and the recipe.  I am making a special Cherry Cobbler my sister in law sent me the recipe last week and it sounds so good.

Hope everyone had a fabulous Mother's Day and life has been better than ever.  

I know everyone is getting ready for the summer with vacations and kiddos.  Take time with your family to smell the flowers.  Life is way too short to miss all God's gifts.
